Meatloaf ring with miracle whip


2 lbs ground beef
1c miracle whip (not mayo)
2TB finely chop onions
1 1/2 c soft breadcrumbs
2 tsp salt
1/4 tsp pepper
6-8 mashed potatoes
2 cups hot, sliced beets
combine beef, miracle whip, breadcrumbs, and spices. Form into ring. Bake in slow oven,300 degrees for 1 1/2 hrs. Unmold onto platter, fill hole with mashed potatoes, and surround with beets.

Swans down-Harvest Dream Cake 1947



APPLE HARVEST CAKE

1 1/4 c. flour1 c. whole wheat flour1 c. sugar3/4 c. firmly packed brown sugar1 tbsp. cinnamon2 tsp. baking powder2 tsp. salt1/2 tsp. soda3/4 c. cooking oil1 tsp. vanilla3 eggs2 c. (3 med.) peeled finely chopped apples3/4-1 c. chopped nuts
Preheat oven to 325 degrees. Generously grease and flour 12 cup fluted tube pan (nonstick finish pan too). In large large bowl, blend first 11 ingredients with 1 cup of the apples and nuts. Pour into prepared pan. Bake 50-65 minutes until toothpick inserted in center comes out clean. Cool upright in pan 15 minutes; cool. Turn onto serving plate.
APPLE HARVEST CAKE GLAZE:
1/2 c. powdered sugar1/4 tsp. vanilla2-3 tsp. milk
In small bowl, blend glaze ingredients until smooth. Spoon over cake.

Apple Cinnamon Puffs-1948



From Grandma Roberts' recipe book, once again. Something to do with apples, yum.
Prep:20m Cook:30m Servings:8

Ingredients:
1 cup sugar
1 cup water
1/2 tsp of red food coloring if desired
5 medium tart apples (1 1/2 lbs.) peeled and thinly sliced
1/2 cup sifted enriched flour
2 tsp of double acting baking powder
1/2 tsp of salt
1/4 cup of shortening
3/4 cup of milk
2 tbsp of melted ubtter
2 tbsp of sugar
1/2 tsp of cinnamonDirections
Boil to a syrup, sugar & water. About five minutes-Add food coloring if desired.
Place apples in a greased shallow 8 x 12 baking dish.
Pour syrup over apples.
Sift dry ingredients together.
Use two knives to cut in the shortening to make pea sized crumbs.
Stir in milk to make a soft dough.
Drop 12 spoonsful of dough over the apples and make a dent in the top of each.
In the dents, sprinkle in melted butter, sugar and cinnamon.
Bake 25 to 20 minutes at 450 degrees.

Apricot Tapioca for 50 1949

Apricot Tapioca:

2 cups minute tapioca
3 quarts boiling water 2 teaspoons salt
2 pounds apricots 2 quarts cold water 1 quart sugar or Karo
Add salt and boiling water to tapioca, and cook in double boiler until clear. Wash apricots; soak several hours, or over night, in cold water; cook until soft in double boiler or in fireless cooker. Add sugar or Karo syrup, or a mixture of the two, and stir into the hot tapioca. Cook a few minutes longer. Serve with cream, or with extra apricot juice as a sauce.
Dried peaches may be used in the same way.

Chiquita banana-Banana scallops 1948


Banana Scallops

6 green-tipped bananas¼ cup evaporated milk, undiluted½ teaspoon salt¾ cup bread crumbs or corn meal Fat for fryingPeel bananas and cut into 1-inch pieces. Add salt to milk. Dip each piece in milk; roll in crumbs. Fry in hot fat 1½ - 2 minutes or until tender and brown. 6 servings.

One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!
SERVES 16 -20

Ingredients:

1 lb ground beef, browned
1 medium diced onion
1/2 lb bacon, cook crisp and save drippings
1 (16 ounce) can great northern beans
1 (16 ounce) can kidney beans
1 (16 ounce) can pork n' beans

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup ketchup
1/2 tablespoon prepared yellow mustard
1 tablespoon molasses
1 dash Worcestershire sauce
Directions
1Cook bacon.
2Brown ground beef with the diced onion.
3Place first 3 items in a large oven roaster (I use an Enamelware roaster).
4To this, add the 3 cans of beans; do not drain beans.
5Mix all other ingredients together in a medium bowl.
6Pour over meat and beans and stir well.
7Bake at 350 for 1 hour covered.
8Remove lid or foil and bake for 20 more minutes.

Green bean and onion shortcake 1944

Vidalia onion & green bean Shortcake
Ingredients
1 Vidalia sweet onion, thinly sliced,1 can or sm bag frozen green beans. 1/4 c. butter1 c. sour cream1 box 8 1/4 oz. corn muffin mix1 egg, beaten1/3 c. milk1 sm. can creamed corn2 drops Tabasco Sauce1 tsp. dill1 c. grated sharp cheese
Directions
SautĂ© onion in butter. Cool. Add sour cream to muffin mix. Blend in egg with milk, creamed corn, Tabasco, salt, dill. Pour into greased 8×8 inch pan. Sprinkle 1/2 c. cheese on top. Pat onion mixture on top. Sprinkle with remaining cheese. Bake uncovered at 425° for 25 minutes.

Chicken Puff 1942

Instructions
Things You'll Need:
one box puff pastry or ready made pie crust
2 cups cooked and chopped chicken
1 can cream of potato soup
1 can cream of chicken soup
2 cans Veg-All
salt, pepper, thyme
2 T milk
Step 1
Preheat your oven to 350 degrees. Prepare your pie pan by placing one layer of crust in the pan making sure it reaches up the sides of the pan.
Step 2
You can use canned chicken or cooked. Place two or three chicken breasts in a microwave safe covered dish. Add a little water and microwave for about 15 minutes. Check to be sure the chicken is cooked all the way through before cutting it into small pieces.
Step 3
Place all the ingredients in a bowl. Drain the Veg-All before adding it to the bowl. Mix together all the ingredients. Pour the mixture into your pie pan and place the second crust layer on top. Pinch the sides to seal the crust. Cut 3 or 4 small slits in the top crust to vent. Brush with milk.
Step 4
Place small strips of foil around the edge of the crust to keep it from getting too dark. Bake the pot pie for 30 minutes. Remove the foil strips from around the edge of the crust and continue baking until the crust is golden brown, about 15 more minutes. Remove from the oven and let cool for about 5 minutes before serving.

Cold Ham Mousse 1941


Ingredients:

2 tablespoons
Unflavored gelatin
1 cup vegetable or chicken stock
1 cup whipping cream; whipped
1¼ cup ham ; diced
1 teaspoon Prepared horseradish
1 teaspoon Dijon-style mustard
½ teaspoon White pepper
¼ cup Madeira
Hard-cooked eggs for garnish.
Soften the gelatin in the broth in a saucepan. Place over medium heat and bring to a simmer, stirring occasionally. Remove from the heat and let cool to room temperature. Place the whipped cream in the refrigerator. Pour 1/4-cup of the gelatin mixture into a 4-cup chilled mold and place it in the freezer until set, about 5 minutes. Meanwhile, place the ham, horseradish, mustard, pepper, Madeira and 3/4-cup gelatin broth in a food processor and process until fine. Scrape into a work bowl. Fold in the whipped cream. Pour the mixture into the prepared mold. Chill at least 4 hours before unmolding. Garnish with quarters of hard-cooked eggs before serving. Makes 10 buffet servings or 6 regular

Saltines 1946 Country Gentleman soup


Use up snips of leftover veggies. In a new soup! Treat hubby to this premium soup.
1/2C Cooked corn
1c mixed cooked veggies
1c cooked stock (veggie)
1c thin white sauce
"premium" crackers (saltines)
add all, heat thouroughly. Top with crackers.

Ranch Bean Casserole:
It’s great by itself or with chips.
1½ lbs. hamburger meat ½ diced onion 1 large can Ranch Style Beans 1 large can Spanish Rice (may have to buy the box) Dash of garlic Salt and pepper 4 oz. Mozzarella cheese 4 oz. Monterey Jack cheese
Brown meat and onion until meat is crumbly. Drain. Add the beans, rice, garlic, salt, and pepper. Top with the cheeses. Bake at 350° for about 30 minutes or until cheese is melted. It usually fills a 3 quart casserole dish.

*Vegetable-Pork Loaf
*Green Beans
*Onions
*Sauteed corn in tomatoes
*Fluffy whipped potatoes
Recipe:
1 1/2 lbs ham or beef (ground)
1 egg slightly beaten
1 TB vinegar
2 tsp mustard
1/2 c evaporated milk
2 slices bread, cubed
1c grated carrot
1c finely cut celery
3 halved peaches
3 marashino cherries
Prep:
Mix meat, vinegar,milk, bread,mustard,veggies. . Put cherries in halved peaches, put into bottom and sides of mold ring. Put in meat. Unmold. Bake moderate oven 375 for 1 hour.

Ingredients for Egg Rarebit Recipe:
4 ounces cheese
4 eggs
Cayenne and salt
4 rounds of hot buttered toast
Instructions
Cut up the cheese and melt it with cayenne and salt.
Poach the eggs.
Pour the cheese on the toast and place the poached eggs on top of the cheese.
Serve immediately.

Tomato Treasure Baskets 1941 Hellman's Mayo

Ingrediants: 8 full size tomatoes
3/4 lbs cottege cheese
4 TB Real Mayonnaise
3/8 tsp grated onion
1/8 tsp salt
1/8tsp pepper
1/2 spanish onion, cut into rings
1 large green pepper, sliced
1 large sweet red pepper, sliced
romaine lettuce

Directions: Cut off stem end of tomatoes. Remove seeds, and invert to drain. Mix cottege cheese with mayo and seasonings, diced onion.Fill tomatoes with cottege mixture. Put back on tops. Arrange filled tomatoes on bed of lettuce with pepper rings as shown. Serve with Nut mayonnaise.

Ingredients:
3 cups sugar
1 cup shortening
3 large eggs
2 cups mashed cooked pumpkin
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 cup chopped pecans
Preparation
Beat sugar and shortening at medium speed with an electric mixer until creamy. Add eggs and pumpkin, beating until blended. Combine flour and next 8 ingredients; gradually add to pumpkin mixture, beating until blended. Stir in pecans. Pour into a greased and floured 10-inch tube pan.
Bake at 350° for 10 minutes. Reduce temperature to 300°; bake 1 hour and 20 minutes

Cinnamon Bread 1940

1/4 cup butter, softened
1 1/3 cups sugar, divided
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon ground cinnamon
Directions
1Preheat oven to 350°F.
2In a large mixing bowl, beat together butter, 1 cup sugar, and egg.
3Combine the flour, baking powder, baking soda, and salt.
4Add the flour mixture to the egg mixture alternately with the buttermilk.
5In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
6Pour a third of the batter into a greased 8X4X2-inch loaf pan.
7Sprinkle a third of the cinnamon sugar on top of batter.
8Repeat layers twice.
9Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.
10Cool in pan for 10 minutes.
11Remove from pan to a wire rack to cool completely.

Old Fashioned Chocolate Fudge Recipe
1 1/2 c Milk4 oz Unsweetened chocolate (sqs)4 c Sugar3 tb Light corn syrup1/4 ts Salt3 tb Butter or margarine1 1/2 ts VanillaCombine milk and chocolate in medium-size heavy saucepan; cook over low heat until chocolate is melted. Add sugar, corn syrup and salt and cook, stirring constantly, to boiling. Cook, without stirring to 234F on a candy thermometer. (A teaspoonful of syrup will form a soft ball when dropped into cold water.) Remove from heat at once. Add vanilla and butter or margarine, but do not stir in. Cool mixture in pan to 110F, or until lukewarm; beat with wooden spoon until mixture thickens and begins to lose its gloss. (This will take about 15 minutes.) Spread in a buttered 8x8x2" pan. Let stand until set and cool; cut into squares. Makes about 2 pounds.
