I had to admit, at first I had no idea what a rarebit was.... but a frugal recipe indeed!

Rarebit supreme:


2 TB butter

1 1/2 TB chopped onion

2 TB chop green pepper

2 TB flour

1 tsp salt

1/8 tsp cayenne

1tsp mustard

1c tomato juice

1 1/4 c grated cheese

1 well beaten egg

1/2 c cream

1 c cooked flaked crab meat

melt butter in pan, add onion and pepper, saute until light brown. Mix flour, salt and cayenne, add to mixture. Add mustard and tomato juice. Simmer slowly, stirring constantly, until smooth and thickened. Add cheese and stir thouroughly. Stir in egg. Simmer 3 minutes, stir constantly. Remove from heat. Add hot cream and crab. Mix well. Heat through. Serve on buttered toast. Serves 6
